The history of burgers is a one-of-a-kind cultural exchange. With the spirit of innovation and a shared love for simple yet delicious food, burgers come to take the front seat. From ancient minced meat dishes to modern gourmet burgers, the journey of the burger spans centuries and continents. Let’s take a look at how the burger has evolved from its modest beginnings to becoming a global favorite. This blog is your go-to guide for tracing the ordinary origin of the extraordinary dish.

The Origins of the Burger

The origins of the burger can be traced back over a century. Both Germany and the United States stake the claims to its invention. The spread of burgers is worldwide because of the emerging concept of a new business model — fast food franchises and the globalization of food.

Long before the burger became what we’re familiar with, it existed but in different forms and shapes. One of the earliest forms of ground meat dishes can be found in Apicius, an ancient Roman cookbook. It describes isicia omentata — a dish made of minced meat, flavored with pepper and wine, wrapped in caul fat, and then grilled or fried. Another dish to which hamburger is owed is steak tartare. It’s only a seasoned ground beef patty served raw. When the first restaurant recipe for steak tartare appeared, it was not named. Thanks to Jules Verne and his novel Michael Strogoff we get to know this dish by its name.

Fast forward to the 18th century, we find the Hamburg steak in Germany — a thick, seasoned, and pan-fried beef patty. It’s often served with bread. Sailors loved it for it was easy to cook. German immigrants arrived in the United States in the 19th century and brought the Hamburg steak with them. American chefs began adapting the dish afterward.

Adding spices and serving it between two slices of bread, makes it more portable and convenient. It was not until the 19th century when Elizabeth Leslie Cook included this recipe in her cookbook to make this a local cuisine of the United States.

The Rise of the American Hamburger

By the early 1900s, the burger started gaining popularity as food vendors and diners found it handy. On top, its affordability, ease of preparation, and satisfying taste made it a hit with Americans and foodies across the world.

With the growing demand for burgers, entrepreneurs found an opportunity to standardize and mass-produce burgers. This led to the birth of fast-food restaurants. By the mid-20th century, drive-ins and diners had become the heart of American food culture. Burgers have got to play a huge role here. It secures its place as no longer just a meal — it is now a lifestyle.

Burgers Go Global

The 1950s and 60s saw the rapid expansion of fast-food chains. It, in a way, helped spread American culture—and the burger around the world. As some burger giant brands expanded their wings internationally, they ultimately introduced burgers to new audiences. And this is how local cultures began adding their unique twists.

In the United States, regional variations emerged to give the familiar burger a new name and new shape, such as:
